David Flores

Back in 2025 we had the pleasure of meeting David and the rest of the Flores family on their farm, Finca El Morito, high in the mountains of Cajamarca in the town of El Diamante. David has taken over running of the family's farms from his father, Faustino, a second generation coffee farmer, and through his management has transformed their production into some of Peru's finest.

OUR CARBON IMPACT

Our Roaster:
We’ve recently switched to a new electric Typhoon roaster which allows us to significantly reduce our carbon footprint. We selected it for its capacity, efficiency, and to maintain the same high-quality roasting. This transition also marks a step toward our long-term goal of becoming carbon neutral, with a commitment to using 100% renewable electricity.

Our Packaging:
Our 250g bags are paper based and can be recycled with kerbside recycling or composted in your garden. We recommend storing your coffee in an airtight container like this one. Our 1kg bags are 70% wastemade (LDPE4) and recyclable with soft plastic at the supermarket. Please don't put them in your curbside recycling. The planet thanks you!

The Yallah Buying Standards are a set of criteria to enable us to source coffee in a way we feel aligns with our values and principles.

Regenerative farming is a holistic approach to actively improving the ecosystem health of the whole farm. From the depths of the soil to the tips of the trees, and all species of flora and fauna in the middle, regenerative farming prioritises the ecosystem health over coffee production and yield.

MEET THE PRODUCER

David Flores

Initially, the farm began with only two hectares of Caturra and Bourbon varietals, but today it spans 50 hectares, with a focus on sustainability and innovation as it's grown. Much of this is because of the family teamwork, led by David, to improve coffee processing and post harvest techniques, but also invest in higher quality varietals and seek international buyers.

This Bourbon lot is a great example of a coffee grown and processed with the utmost care and skill, presenting all the characteristics we love about Bourbon - it’s sweet, bright and incredibly moreish.

Our travels in Peru took us to the most remote areas we’ve ever visited, high up in the foothills of the Andes mountain range, where the forest is dense and coffee exceptional. Our goal is to find the best and most unique coffees and producers Peru has to offer, from sweet and balanced Bourbons to bright and expressive Geshas.
