BUYING STANDARDS

It’s really important for us to work with trusted partners in our supply chain who can provide us with honesty and traceability. We have created a set of guidelines to help us source coffee in a way we feel aligns with our values and beliefs. There are three core categories that we think outline the most important factors to consider when purchasing coffee: economic transparency, social relationship, and environmental efforts.

COUNTRY OF ORIGIN

Huila, Colombia

Colombia is renowned for pushing the boundaries of coffee production and processing, being home to many of the worlds best and highest paid producers.

It’s well known that Colombia is synonymous with exceptional quality coffee. We aim to showcase the very best of what this country has to offer, as well as working with our partners to shine a light on marginalised producer groups, such as women producers.

Terra Cafes

It is somewhat unusual to receive a variety such as Bourbon Sidra, a high quality hybrid, from a group of producers; typically they’d be produced by experienced producers with a history of growing and processing such varieties. In this instance the association provides support to the producers in growing the Bourbon Sidra, aiding in the care of these tricky to grow trees, to ensure healthy plants and great tasting coffee. This variety is not particularly productive compared to its counterparts, but producers are curious and willing to try new things to diversify their production and increase the potential quality of their coffees.

After the cherry is removed from the seeds the coffee is fermented for 16 hours, enhancing clarity and complexity, before being dried for 10-16 days on raised beds. The result is a beautiful if unusual herbaceousness, think hops, lifted by an almost sparkling acidity that we cannot get enough of.

Environmental Efforts

Shade Grown

The distribution of shade trees aids in recreating a conducive microclimate for the coffee plants, reducing the stress caused by excessive sunlight.
By focusing on these sustainable agricultural practices, Migoti is advocating for a more consistent, robust coffee harvest. This proactive approach not only ensures a steadier yield but also contributes to the overall longevity of coffee farming in the region.
