BUYING STANDARDS

It’s really important for us to work with trusted partners in our supply chain who can provide us with honesty and traceability. We have created a set of guidelines to help us source coffee in a way we feel aligns with our values and beliefs. There are three core categories that we think outline the most important factors to consider when purchasing coffee: economic transparency, social relationship, and environmental efforts.

Costa Rica

A real showstopper origin, known for its high quality coffees and experimental fermentation processes. We have been buying small lots from the same farms year on year, and we are always impressed by the innovation in processing techniques. Expect wild, fruit heavy flavours.

In the early 2000’s, a handful of producers in the Tarrazu region started to build their own ‘micro mills’ for a number of reasons; the first was to have complete control over how their coffees were being processed, but also to earn better prices for their harvests by selling dried green coffee that was ready to export straight away. In 2009, after always selling to co-ops and never knowing where the coffee ended up, they decided to follow suit and build their own mill. Now Daniela is managing the farm along with her father, Jorge, and they are producing delicious lots like this one.

Social Relationships

Female Producer

In many coffee growing countries, the concept of women owning coffee farms is still uncommon and in some places, prohibited by government laws. Yet women contribute a staggering amount of the labour involved in producing coffee, from picking the cherries to hand sorting and processes. Supporting female producers and co-ops is crucial to eliminating the gender gap in coffee.
