This farm was purchased by Renardo Ovalle Vides in 2012, with the intention of growing high-quality coffees using sustainable practices. Beating stereotypes that the two cannot go together. Large parts of the farm are protected areas of wild forest, which is used to prevent soil erosion and reduce the plant's exposure to winds. Their efforts to use a permaculture model include the use of native trees, composting and some intercropping to replenish soil nutrients. The aim is to try and recreate coffee’s natural habitat in high altitude forests.
This lot of coffee is fully washed and fermented in tiled reservoirs for 18 hours before being washed and graded in channels. After grading the coffee was soaked in tanks for 12 hours. Grown in the El Pajal region of San Antonio Huista, Huehuetenango. The region is blessed by hot winds that blow from Mexico’s Tehuantepec plain, protecting crops from frost. This allows for the cultivation at very high altitudes and an ability to grow wonderful tasting coffee that can only prosper in stable climates.
